Let Foothills Local Meats "Cure" Your Monday Blues

At Foothills Local Meats Butcher Bar, all the cooks get to decide on and prepare the blue plate specials. "It gives all the kitchen crew some creativity and keeps things fun and delicious," said Foothills Owner/Butcher/Chef Casey McKissick.

I love a good blue plate special, and at Foothills Butcher Bar in West Asheville, they have GREAT ones that I find myself either ordering — or regretting not ordering — every time I go in there.

I mean, to be clear: No regrets on the things that I do order when I don’t get the blue plate special. Everything at Foothills is excellent in my opinion, it’s just that I regret the sad fact that I can only jam one meal at a time into my pie-hole and therefore sometimes forego the blue plate specials for the burger or hot dog or whatever other housemade meaty treats they have on the menu.

The last time I made the very wise decision to order the blue plate special, I received a beautiful, enormous spread that included housemade andouille sausage, pimento cheese grit cakes, potato hash and Brussels sprouts — it was amazing!

The blue plate specials at both the West Asheville and Black Mountain locations rotate with different meats and vegetables regularly based on what's available from the butcher shop, as well as with different seasonal veggies.

Are the blue plate specials a daily thing? Again, according to McKissick, “Sometimes it changes twice in a day, sometimes a blue plate will run for a few days; it just depends on supply and traffic.”

Traditionally there are strictly “No Substitutions!” when it comes to blue plate specials, but McKissick, being the nice guy that he is, splits the difference at Foothills. 

“We substitute veggies if we have them and people ask," he said. "The meat is generally prepared just for the dish and drives the rest of the dish, so we don't really substitute that out as a rule.”

My most recent experience with the blue plate special was incredibly tasty and satisfying, so I recommend that you always check the board before tucking into your usual. Hey, that burger is always gonna be there — the blue plate specials are there and then gone.
