Slava is a Ukrainian cafe and bakery on Wall Street in downtown Asheville, open Wednesday through Sunday for breakfast and lunch. Owner and baker Svitlana Eadie grew up in a village in the Carpathian Mountains and cooks from family recipes, like her grandmother's borscht and cabbage rolls and her great-grandmother's deruny, Ukrainian potato pancakes. The borscht comes in beef and vegan versions, and the cabbage rolls have a vegan version too. The case is stocked with fresh bread, pastries and cakes, and there's coffee and espresso to go with them.
Get there in the morning for deruny and first pick of the bread. It's closed Monday and Tuesday, so plan a Wednesday to Sunday visit.
