Hector Diaz began selling burritos in Asheville before Google was born. But officially, he took ownership of the space on Patton Avenue in 1994. His menu of simple burritos shared with locals, visiting bands and artists and summer tourists has expanded, but his vision is the same: feed people well, with authentic ingredients, using local fare from local farms and invite everyone to the party.
